I am a YouTuber, But when I record demos, there are textures missing... Is there a way to fix this? Any ideas?

Yup.
Try making a shortcut for CoD2, then right-clicking it and selecting "Properties" from the drop-down menu. In the "Target" field, you should see the path to your Call of Duty 2 exe. After the path, add the following: " +set fs_game kingbot" and it should work.

There should be a space between the last quotation mark and the + sign.

I am now getting an error when i start up demos
Error : Cannot create hunkusage.dat.

Another method is to join our server, leave and then play the demo without quitting.
